Smokers are renowned for their ability to add flavor and texture to meat that no other barbeque or grill can match. And considering the number of high-quality smokers on the market with reasonable prices, it is no wonder that the popularity of smokers is skyrocketing.

The three basic types of smokers are charcoal smokers, propane smokers, and electric smokers. Before moving on to the important specifications of the 7 best smokers of 2018, we will explain some key features of smokers.

Type - charcoal smokers use charcoal as a heat source, propane smokers burn propane to provide heat, and electric smokers use an electrical heating element as a heat source

Construction - the material used for the housing or cabinet of the smoker

Loading - top loading smokers require you to place the meat into the smoker from the top, while front loading smokers have a door which opens and allows you to place meat onto the grates or racks; the grates or racks of top loading smokers are also installed and removed from the top

Number of Grates - the maximum number of grates or racks that can be installed in the smoker; most smokers allow fewer grates or racks to be installed to allow more room for food or to vary the position of the food in the smoker

Grate Dimensions - the dimensions of the grates or racks; as a point of reference for the width, the length of a rack of trimmed spare ribs is approximately 18 to 19 inches

Distance Between Grates - the space between adjacent grates or racks; this is the maximum height of food that can be cooked when all grates or racks are installed

Max Food Height - the maximum height of food that can be cooked in the smoker; this is the distance from the bottom rack to the top of the smoker (assuming the racks above the bottom rack are removable)

Grate Material - the material used for the grates or racks; stainless steel is preferred as platings can crack or peel resulting in possible food contamination and rusting of the underlying steel

Burner Heat Output - the amount of heat output by the burner of a propane smoker

Heating Element - the maximum amount of energy consumed by the electrical heating element of an electric smoker

Controls - the adjustable settings of the smoker; the smoker may have analog controls such as a rotary propane flow control valve or a rheostat to regulate the power consumed by the electrical heating element of an electric smoker; the smoker may have digital controls for turning the smoker on and off, regulating the temperature of the smoker, and controlling the time the smoker is on

Remote Control - whether a remote can be used to control various settings of the smoker

Viewing Window - a window in the door or side of the housing or cabinet of the smoker allowing the food or a thermometer to be viewed without opening the smoker

Light - a light used to illuminate the food or a thermometer inside the smoker; only included on smokers with a viewing window

Thermometer - used to monitor the internal temperature of the smoker

Water Pan Included - whether or not a water pan is included with the smoker; most smokers have sufficient space at the bottom or on a rack to place a water pan; water pans help to regulate the internal temperature of the smoker, create an indirect cooking environment in vertical smokers, and add moisture and flavor to the meat as it cooks

Weight - the weight of the smoker itself (not the shipping weight including the box and packaging material as some sites use)
